Sunday Morning Paleo Coconut Flour Waffles
So… I was looking for a yummy meal to feed my family that I could enjoy guilt-free.
It was Sunday morning, and we generally scout out waffles or pancakes at a local breakfast joint. I’m doing my darnedest to eat more healthfully, and unfortunately, eating out doesn’t work well to that end.
In an effort to meet all our needs, I pulled up this recipe from The Unrefined Kitchen on Pinterest, and decided to give it a try (since I had all the ingredients on hand… YAY!). This recipe is 100% Paleo, and 100% amazing!
I followed the recipe to a T, and the waffles were amazing. Don’t cut corners by not whipping your egg whites, though, that’s what helps give them a light fluffy texture. A word of warning, they aren’t crispy, like you might expect. However, the flavor is so good, you will be lucky if you get them to the table. My husband and 2 year old kept coming over and stealing the waffles as soon as they were done, and eating them absolutely 100% plain (which is unheard of from this peanut butter/syrup duo).
Sunday Morning Paleo Coconut Waffles
4 eggs, separated
2 Tbsp. coconut oil, melted
1 tsp. vanilla
1/2 tsp. baking soda
1/8 tsp. salt
1/8 tsp. cinnamon
1/3 cup almond milk
1/4 cup coconut flour
1/2 Tbsp. raw honey
1. Put all the egg whites in a bowl and set aside.
2. In a second mixing bowl, combine egg yolks and all the rest of the ingredients.
3. Beat egg whites until stiff peaks form. Fold egg whites into batter mixture and gently mix until egg whites are incorporated.
4. Pour appropriate amount unto your waffle iron and cook.
5. Serve with fruit. (Ooh, or whipped coconut cream!)
We never did make it to the table to eat, because everyone filled up before I was finished cooking. I suggest cooking while everyone is still asleep, or hiding out the the laundry room with your waffle iron. They’ll never find you in there!
